Is this what I should be eating to be healthy and build muscle?

Yes and no. Great diet and workout regimine, but Your body needs more food to repair and build up your muscles. I not saying that you won't build muscle but you could be getting a lot more. Eat more stuff. Healthy stuff of course. But eat lots more. TONS MORE. Cardio is awesome but try to decrease the amount your doing. Your current diet exercise will probably, get you defined and maybe stronger, but you won't gain much muscle weight at all. Good luck!
